Easy flat iron

My local butcher/delicatessen had Prime grade flat iron steaks for $10 a pound. We get two meals out of a 1.5# flat iron, so it's really not that expensive.

My favorite "phoning it in" way to handle this cut is a 4-6 hour marinade in Stubb's Beef Marinade and then some time on a smoking hot grill.


Sliced thin after a rest and put on a plate with little roasted yellow potatoes and fresh spinach sautéed in olive oil with shallots and a little lemon juice.


Th leftover meat will reappear in breakfast burritos.

$13 a pound. They also have Kobe flat irons for $24. I've done one of those and it was actually overkilll. The marbling in the Prime is plenty. As much as I enjoy "meat butter", the quality/price ration wasn't there.

Well done, amigo.  Love those breakfast tacos/burritos with some smokey goodness in them.  A little place here serves an 8 ounce flatty, tater, and onion rings on Saturday night for $8.  Yep, $8, not a frightening place to go in, and it's dang good.  Don't know how they do it, but it's a whale of a deal.  Now, given the choice of yours over theirs, well, I'm headed to your place instead.  Nice work, sir.

Thanks, my friend. I can find flat iron cheaper and often of really good quaility. Can't pass up a bargain though!

Thank you, sir! Before I moved to Idaho, I didn't even know this cut existed. Now I cook four or five of these for every tri-tip.
