Easter Ham

Happy Easter, everyone. It was very strange watching services online instead of helping my father-in-law prepare breakfast for Sunrise Service for his church. In thirty years or so, I think I have missed out on that tradition only three times.

Since we had a ham in the freezer, my wife insisted that I double smoke it, Bearcarver style. I've done this at least a few times now, a couple of times at Christmas. It is one of the many things I have done because Bearcarver said to do it that way, and he has helped to make me a demigod in my own home. I think if he told me my smoking skills would improve a few notches if I left my wife, I know that I'd truly miss her. :emoji_laughing:

When this is finished, we will take some of this over to my parents, along with fresh green beans, scalloped potatoes, and homemade rolls. We've been trying to help them keep from venturing out by fixing meals for them and leaving them in their garage.

Apple/Hickory blend chips in the tray, Pitmaster's Choice pellets in the tube in the mailbox. Rain is expected off and on all day, so I'm set up just inside the garage.

Fat is carved and in the tray above, with holes poked to allow drippings.


At three hours in, I inserted the probe. IT is at 91 degrees.

Looking good. I have done a few hams, among other things, following Bear's methods and they have all turned out great.
 
Five and a half hours in, the IT is at 130, so I hit it with the first round of glaze and used a baster to remove some of the juices the ham was drowning in. And since I had the door open anyway, I had to take a picture.

Finished it earlier, but had to get dinner over to my folks, and of course, we couldn't wait to dig in, too. My wife kept raving about it (she does this every time I smoke a ham like this), and kept calling me "the man". I kept telling her that all I do is follow Bearcarver's instructions. The rest of the meal was great, too, but the ham topped it all. Thanks again, Bear.
