Hi folks....  Brand new to the Forum so forgive me if I breach ettiquette.  I am a huge fan of east carolina style smoke barbecue pork and have smoked chickens the same way (vinegar based sauce)... I am planning to do a smoked turkey for Thanksgiving in the East Carolina style, but-being that it's Thanksgiving- can't skip out on the gravy!  Of course I could make a traditional gravy, but not sure it would go well with the spicy-vinegary tang of the bird.  Any suggestions on a gravy that would compliment this style of cooking and still be good on the potatoes?

  The only response I have to your question is, I make a Sweet &Sour Meatloaf . I use a combo of Sugar and Vinegar that gives me a savory sweetness . This might work on the Spicy-Vinegary of your Que.
