Ok, I cheated.  This mod was originally designed and implemented by others for cold smoking in electric smokers.  I have an MES 40 and it works great.  See below:


So I have a WSM that I dearly love.  Biggest shortcoming is that making smoke is a tough ordeal.  The AMZNS pellet smoke tray runs great for about 10-12 hrs.  How do I leverage that capability to the WSM.  I tried sticking it on the 2nd tray just above the water bowel.  It went out.  Made some nice charcoal pellets though. So after a lot of thought I hit on this technique: 


Yep.  It's just hanging on the vent tab.  Nothing more.  Nothing fancy.  See that smoke coming from the top vent?  That kept coming for the next 10 hours.

No more buried chunks of wood, or opening the charcoal door for me.This is a done deal.
 
Well if it works for you then I guess it's a good thing.

But I've never needed any extra smoke from my WSM.

Just wood & charcoal mixed together & it works just fine for me.

I used the mailbox to make Scarbelly Wings (&drumsticks).  They were unbelievable good.  The extra smoke was very evident.


Two batches, One was with very little heat for my wife.  I love fried chicken, but I would choose these over fried chicken all day long.  Skin was nice and crispy as well.  I cooked until I hit an internal temp of 185 degrees.

Next time I will include thighs and maybe a breast or two as well.
