So thanks to many members here I did a successful first smoke of wings. I prepper them at 10am but dring them, applying a light coat of baking powder and then seasoning. One set of wings got Yardbird and the other got Traegers Saskatchewan seasoning. They rested in the fridge uncovered until 5 when I put them on. I ran them at 275 on my Traeger Pro 22 and decided to try out my new inkbird on this cook. I ran two probes for internal smoker temp and to look for hot spots, the other two in wings just for giggles. I did find my PID is wildly inaccurate on internal temp and ended up cooking yhe wings faster than I wanted. Set at 275 I was seeing temps to 300 so I dropped it down to 250 after around 20 minutes in and still saw temps to 286, but thats closer to the 275 I wanted. At 30 minutes I flipped them. At 1hr I bumped it to 375 and flipped then back over. I checked every 3 minutes for crispness. At 9 minutes I flipped again and pulled after 3 more minutes. Skin was crispy and wings were juicy! My girlfriend isnt a fan of wings usually, mostly due to the buffalo sauce, and she loved these. I have some full wings I will be doing the same to soon. We paired them with fries pickles and chili cheese tots. Thanks again for all the info!
