I tried a batch of dry rubbed chicken wings for the first time today. My goal was to emulate the ones at Home Team BBQ here in Charleston. I was kind of lazy and used Apple wood because that's what I had. Would like to try pecan next time.

I simply dry rubbed the wings, let them sit for 30 mins at room temp, then tossed them in the MES30 at 250° for about two hours.
