I brought a bunch of dried mangoes back from the Philippines. I was wondering if I could use these to make a sauce or something. Any ideas? There was sugar and a preservative added to these.
It's kind of unfair that I never reported what I came up with so I thought I'd resurrect this thread. I still want to try the chicken sausage but have not had a chance.
It turns out dried mangos are pretty nice to work with. I rubbed up and grilled a pork loin on my WK. Then I put together the following recipe using things I learned reading different recipes and articles on the net. I even checked out some Youtube videos!
I toasted some red pepper flakes in 1 TBS of EVOO. To that I added 1TBS Apricot Preserves, 2 TBS brown sugar, 4 TBS red wine vinegar, and 2 tspminced jalepeno(adjust to taste), I also added about 1 cup of chopped dried mango and about 1/2 cup of pitted and sliced cherries that happened to be on sale! I simmered this mixture about 10 minute which reconstituted the mango.
Slice of a thick piece of loin and hit it with a spoonful of the mango mixture and it was quite enjoyable.
I tried it three different times and found that too much spice tended to overtake the fruit taste. I read some fruit chipolte recipes that added onions and garlic but I was afraid to try it! Perhaps someone that knows what they are doing could give me some tips? Bottom line, I learned that any fresh or dried fruit can be used this way.
