Dried Beef attempt...

  1. Following Bearcarver recipe...I've started with this


    Then trimmed it of all fat...


    The fileted it since I didn't feel confident injecting it or leaving it whole...


    Then weighed my tender quick and sugar..rubbed them down and put em to bed...figure 12 days vaccuum sealed in the fridge...

    I will be watching. I follow his recipe and love it.
     
  3. I've been looking at it and it really sucked me into the idea...I have stayed away from cures for most of the meat processing I have been around...so it doesn't feel natural to me...hoping for good results...

    You're going to love this stuff. I take a dried beef sammy to work for lunch every day now.

  8. Well, unwrapped them on Friday and soaked for an hour...changed the water once...dried and placed on a rack to dry overnight.


    Smoked following bearcarvers schedule...


    Man, nice slice of beef...
