Doug, what grinding plates do you use on this? Have not even fired up the grinder yet but this sounds good. Do you season in between grinds? do you use a kitchenaid paddle mixer for protein extraction? Would like to make patties for these.

I cut my pork in roughly 1 inch cubes and run them once through a 4.5mm plate then add spices and hand mix till I have good protein extraction (nice and sticky).

Keep the meat cold throughout the grinding and mixing process. I chuck the ground meat in the freezer for a few before mixing.
