I cut my pork in roughly 1 inch cubes and run them once through a 4.5mm plate then add spices and hand mix till I have good protein extraction (nice and sticky).Doug, what grinding plates do you use on this? Have not even fired up the grinder yet but this sounds good. Do you season in between grinds? do you use a kitchenaid paddle mixer for protein extraction? Would like to make patties for these.
