Bought a Smoked Ham (shank portion) on sale the other day and with it being 30° in North Dakota this time I year I jumped all over it by getting the Big Green Egg rolling today.
Very easy cook - scored the ham and set it in a pan (with a rack on the bottom) and on to the Big Green Egg it went. Added a handful of hickory and apple pellets to the the lump.
Once on the egg about 3 hours or so I got the glaze ready. Mixed some of the Peachbanero spread, some apple cider vinegar and some spicy brown mustard into bowl and heated it up to thin it down a little and get it to mixed well.
After the glaze.
Resting.
Plated up with a side of veggies and a twice baked potato. Drizzled a little bit of the glaze over the ham before serving too. AMAZING flavor.
