Double Butts - First time

Okay. I’ll keep this short, since if you’re like me you’re mostly here for the pictures. Smoking a couple butts for PP today. Double pack from Costco at 15.9lbs total. I’m guessing they’re about 8.5 and 7.4lbs a piece. We’ll have 8 or so adults and 7 or 8 kids over at 2pm today, with dinner scheduled for 5. Started the process at 9pm last night. Got the WSM fired up and came inside to prepare these beauties. Trimmed them a little, then mustard, and an off the shelf rub. Got em on the bullet just a few minutes before 10pm. Being my first long smoke, I babysat it until around 12:30am before going to get some sleep. Had a little rain shower pass thru at around 11pm that made the dialing in process a little trickier, but by 12:30 the tempwas set at about 240F and I went to bed for a few hours. Got up and checked it at 3:30(260F) then again at 6:30(230F). Now it’s a little after 8 and grill is at 240F and the smaller butt is at 186F. Hoping to have both off the smoker by noon for a few hour rest before pulling.

Looks good so far . I went out and looked for some smoke ,, didn't see any .
 
Looking good so far. Keep us posted. Daughter's graduation and open house are today and tomorrow so no smoking for me. I'm going to live vicariously through the forum this weekend.
 
I haven't checked butts from Costco for a while, but it looks like they've moved from away boneless to bone-in. Very cool. Might have to make a Costco run.

Yes sir. And only $1.89/lb. Seemed like a pretty good deal considering the local butcher shop was $2.69/lb.

Not all locations carry the bone in butts... the one I work at doesn’t... nor do we sell whole briskets...

Hahaha I wish! But go to the meat room workers and ask if they have any prime caps?! Super cheap and they are prime sirloin caps in cryo vaccs that are kept out back cuz only a couple come per case of whole sirloins! You’re welcome

Sorry for the wait. Got caught up in entertaining. The PP turned out great. Awesome bark. Good flavor. The only thing I wish I would’ve done is prepare a finishing sauce earlier. When I pulled the pork everyone was ready to eat, so there was no time for that. Not that anyone complained, but from everything I’ve read here it would’ve made it that much better. Alright, here’s the money shot....
