Im doing my first cook on my new fridge right now. I am doing spare ribs, butterflied chicken, beans, abts, and cubed red potatos with sausage and corn. I have a good idea on time for everything else but need help with the potatos and sauge mixture. I will be smoking between 230* - 240*. Thanks for the help

When I was a Newbie Culinary student, I once asked, " How long to cook a Potato? "...Chef looked me in the eye and said, " Until It's Done! "...Anytime someone asks about potatoes I think of Chef...Depending on the size of the chunks, 2-3 hours should get them tender. Sounds like you have a plan but might I suggest doing the Potatoes in the Oven. All that Smoked food will become monotonous to eat and dull the taste buds. You should have different flavor profiles to keep things interesting....Some Olive oil, S & P  and whatever seasoning you like, then in the Oven at 400*F for 30-40 minutes then add the Sausage and go another 30 or as needed..JJ

Thanks Chef. I am having problems with the smoker so I will do them in the oven. Never thought about too much smoked food. I already mixed everything together is it all right to cook it that way or should I pull the sausage out and add it later like you said?

Sorry I am getting back late...I don't know what all's in the recipe but Yes you can cook it all together but may not get nice crispy brown potatoes before the Sausage starts to dry out...JJ
