DIY temp control question

morning all. There’s a guy on YouTube from “Barley and Hops Brewing” that did a new video for setting up an Inkbirg pid controller. As I was smoking a pair of pork butts I thought this might be what I was looking for. I built a themp controller about a year ago but it never worked very well as I know bugger all about the setting portion. So I dragged the damned thing out, did a boiling water test to be sure it was accurate and did the setup as per his instructions. Holy crap it worked...sort of. It functioned perfectly right up to almost the end. For what ever reason it read 15* less that the pit temp, so the fan kept running (I use a Maverick et733). So after a bit of pondering I’m wondering if the el cheapo thermocouple that came with the unit might be the issue? I’m hoping some with some experience with this set up might be available for comment.

I'm no expert on the matter but I do know the "offset" value needs to be set on the PID which is your 15* differential.There are many threads on here that discuss this.Search is your friend.
 
Thanks for your response moto crash. The thing is the pid readout and the display on the Maverick were pretty much bang on right up till the last hour, then the variation.
The thing is, when I calibrated it in the boiling water I had to adjust it 4 .7 points. When I put it in the smoker,right beside the Maverick probe, I had to adjust it 15.5 points. I dunno.
 
Mavericks are not known to be the most accurate thing on the planet. So take keep that in mind when using a Maverick as a baseline.
