Dirty Smoke flavor

Do I need to wash out my smoker or just do a burn to get rid of the bitter flavor I'm getting when I smoke?

I let mine go to 300 then open and brush it down. I guess it helps but I mainly do it to get anything that's not good, out

The question really is, why do you get a bitter flavor when you smoke?  

Normally it is from creosote buildup that has accumulated inside your smoker, which could be from poor ventilation inside your smoker.

What kind of smoker do you have, are you producing white, billowy smoke when you are smoking?

Please, give us more details so we may help.  Is your smoker charcoal, wood, propane, pellet, electric?  Vertical or horizontal?  Kettle?

I agree with Pops, it sounds like creosote.

Are you getting thick white smoke when your smoker is running?

That would cause the creosote & the bitter taste.
