What does everyone use for a digital thermometer in their grill or smoker? I'm looking for one that I can put on the grates and leave there, so I know the actual temp of the grill at multiple areas of it. Also how do you rig them up? Just lay them on the grates or what? Pictures would be appreciated, thank you.

Maverick 723 , dual probe, temp probe for smoker clips onto your cooking grate just do a search for dual probe thermometers
 
You can use many different remote probes and clip them with:

This is from Amazon, but usually available from many BBQ suppliers. Just make sure that the probe is rated for heat resistance.
