Different Kitchen Knife

I was gifted a Matsato brand Japanese style kitchen knife. I wasn’t to sure about it at first but I gave it an honest tryout. Actually really like it. It’s shorter at 6” blade and about 10 1/2” overall. It has an upswept blade and very well balanced, not weight forward. I’ve used it a few months now (daily) and only touched the steel a couple times, it stays sharp. Both the wife and I prefer that knife now in the kitchen for 80-90% of most slicing and chopping duties. It’s cheap at 40 bucks and actually a decent knife. So I thought I’d pass it along. It comes with a leather sheath so would be great for the RV too.

Thanks for the review, Eric. That looks like a very nice knife for 40 bucks! That is something my Son-in-laws could use. Hmmm, Christmas idea. Thanks again.

NOPE, NOPE, NOPE. Don't need another knife. Looks nice. Do you use the finger hole ? Not sure if I would or not. Use it safely.
No, I don’t use the finger hole, but I do put my index finger on top of the blade at times, it gives very precise control. The knife is a bit goofy to first look at, but once you start using it the whole design starts to make sense. It’s just different but handy at the same time and comfortable to run.

Be curious as to your thoughts once it’s there.
I'm a big fan. It is very sharp and versatile. I've used it to chop veggies, remove fat cap and slice meat. Here is the recent eye of round I did.

Glad you are liking it so far. It’s a great tool in the kitchen. The blade is shorter than traditional chef knife but runs great on the cutting board. And yes is useful for trimming and slicing meat as well as veggie work.
