I have been watching some historical documentaries about life in different eras in Britain and I saw an episode where they were making clotted cream with scones and tea.

It looked good so I gave it a try myself. I got 2 quarts of heavy cream 35% or higher fat. It is said that ultra-Pasteurized cream doesn't work as well but this is what I could get.

Pour the cream in a pan so the cream is 1 - 2 inches thick. Place in a 180 degree F oven for 12 hours.

Remove from oven, cover and cool several hours. Scoop the clotted cream off the top of the pan.

Here are pics of the results. I didn't get pic of the pan right out of the oven. It has a kind of yellowish skin covering the pan. This is a good thing.

I made a batch of cherry scones and English tea to round everything out. These were delicious. Now I know why they like these so much in Britain.

That looks and sounds like it would be delicious. I'll be skipping the tea--always do-- but I'm going to give the rest a try.
I've don't have a clue how to make scones, and your's does look good, so if you have a recipe.........(hint, hint)

I just used the King Arthur flour basic scone recipe.


I used chopped dried cherries for the fruit.

I added 1/2 t cider vinegar to the mix to help raise the scones a bit more.

First time I have ever made scones. They turned out very nice. :emoji_blush:

That doesn’t look so bad!
On the weekend I had pancakes with lemon whipped cream which I made completely from scratch. It was absolutely brilliant, much better than just using a vanilla extract to add flavour.
Ingredients:
1 cup / 250ml whipping cream
2 tbsp / 15g powdered sugar
1 tsp lemon zest
1 tsp teaspoon lemon juice or lemon extract (optional)

Now you’re talking!! My wife is from PR, so all the English goodies were new to her, and scones with clotted cream and tea are two of her favorites!! We buy ‘real’ tea from Amazon :)

I have to find cream that is not ultra-pasteurized next time. The ultra doesn't clot as well.. It was delicious.
