Hi Everyone!

I pulled a few Delmonico’s out of the freezer on Thursday evening, let them thaw overnight then put them in a marinade Friday morning.

This is our favorite marinade, my wife wrote out the amounts for a 1/4 recipe, because a whole recipe is huge!

I use a plastic bag and refrigerate them in the marinade for a min of 24 hrs.

On the kettle set up for direct high heat 4 minutes on first side

Off at 125* for a medium and put on some smoked garlic butter I made today and cover with tin foil until butter is mostly melted. (About 3 or 4 mins.)

Pull up a chair and enjoy!

How did you end up making the butter?

I melted a little butter in a cast iron pan then fried some canned minced garlic in it for about a minute or so.

Then I cold smoked a stick of butter like you said and then mixed the garlic and melted butter with the soft stick of smoked butter and stuck it in the refrigerator until it was hard again.

I took a few pics of the process and was thinking of doing a post on it sometime.

Those Delmonico steaks look nicely marbled and you done a great job cooking… they look top notch! That smoked garlic butter topping is one of my favs… I need to do it more often… thanks for the reminder!

And just for the record… I’d pull up a chair to a plate like that any day! Nice job Mike! 👍

They are damn near impossible to find around here, unless you're at a big money steak house.


I have a question for your wife: I'm guessing that the T's in the recipe are tablespoons? Seeing that she wrote 1/4 tsp for the black pepper.
Would this be safe to assume?


Your compound butter sounds KILL'er as well, I'm marking this thread as saved, to try out the next time I Que up some steaks.

You are correct, capital T is for tablespoon small t for teaspoon.

Ok, so the bottom three are also tsp, I wasn't sure if it was just the writing. LOL!!!

You'd never figure out a recipe, if I wrote it in my writing, as it looks like hieroglyphics, as my wonderful wife calls it. LOL!!!
