I was making room in the deep freeze for deer season and found a single bone prime rib that I had shrink wrapped a few months earlier and forgotten completely about - SCORE! Smoked prime rib is is so good I don't want to eat it any other way.

It took 3 hours and 10 minutes at 225F for a 3.6 lbs single bone rib roast (bone tied back on) to hit 135F. SPG for seasoning. Hickory smoked for the entire time in the smoker. I tented it for 10 minutes and it slid up to 140F. Here are the pics.

Eddie, if you find any more and still need room send them my way. That's the way we like our primes also where you can almost still see the muscle twitching.
