So I decided to try 8lbs of wings today. Cooking at 250 for what looks like its going to be 2.5 to 3 hours. I used a creole butter, creole roasted garlic butter and siracha injection with the Cajun dry rub. I injected them and then rubbed them and sat them in the left over injection mix while I started the smoker. I am using charcoal and cherry wood. I sprinkled more rub on when I placed them on the smoker since some fell off. I have flipped them at each hour and did a light mopping with the injection mix which has helped to make them crispy, guessing cause of the butter. I am currently 2 hours in.

Ooooo....with that injection, those are going to be hot!!!!

Well they are finished, little tough so I pan fried them for a minute, fairly spicy, good smoke flavor and tenderness


. Not disappointed, but room for improvement, my three year old loves them. Thinking of a sweeter dry rub will help next time.

 
Mustang, Those are nice looking "Wings" the injection will be great and a little Bluecheese for the Folks that have to cool off the tastebuds.

Cooking at a higher Temp. will help on the tenderness and will crisp them some too. 300*F is a good heat for them .

Wings sounds good, but we're doing Chix and Beef Fajitas this weekend.
