Dave from Oklahoma

My name is Dave, and I currently live in Lawton, Oklahoma.  I have done BBQ all my life, some better than others.  I always am trying to improve.  

Living in the Austin area for a long time made me appreciate the BBQ from Lockhart, Texas and Luling, Texas - specifically Smitty's and City Market.  These are my two favorite BBQ places - Oklahoma Joe's in KC would be my third.  Rounding out the top five would be Dairyland in Jacksboro, Texas and a place in San Antonio where they do barbacoa de cabeza in a pit in the ground. 

I was hoping to replace the handles of my OK Joe with some new spring handles.  And then I became interested in adding the convection baffle.  This led me to this forum.  I appreciate all of the good information here!
