As much as I love ribs and some pulled pork I think a good smoked chicken is amazing. Did a 4+ lb bird already cut up and smoked around 240*-250* with a sweet mix of apple, cherry, peach and sugar maple and a bit of hickory. Took me about 3.5 hours. Salt & pepper on the bird and that was it. I made a batch of Crazy Horse's mustard sauce which is really good on chicken to serve on the side. Also did a batch of ABTs as it was a while since I had those. I had the thin blue going but not sure if it came through on the pics? Oh well.

That looks great, Mark. I see you are getting some smoke seepage around the thermometer. When mine did that, I removed it and put some high temp silicone around the edge and re-mounted the therm. No more seepage. It doesn't hurt anything, I just like to keep it as pretty as possible.
