I've got two 12 lb boneless pork shoulders for a 4th of July party.  So 1.5-2 hours per pound is 18 to 24 hours.  Or I could cut them in half and do 9 to 12 hours?  Anyone have an opinion?  I know my WSM can smoke for 12 hours, but definitely not 24.  So if I don't cut them I may have to add unlit charcoal in the middle of the smoking.

I would season and smoke for 6 ish hours or so then throw it in the oven at 200 to finish for the 16-24 hours.... That's what we do...

Are these by the chance the packages from Costco? If so, I think you'll find the decision has been made for you. They're generally packaged with 2 6-7 lb boneless butts apiece.
