I have been making Snack styx and summer sausage for quite a while and im wondering if you need to let the meat cure in the fridge over night or can you smoke and cook  it after stuffing the caseings.

In some of my styx im also useing high melt cheese and fresh  Jalapeno will this make a difference.

Yes you can mix, stuff smoke all in that order the same day.  Mixing, stuffing and in the fridge overnight is ok too. The cheese and jalapeno wont have an affect on however you decide.
