I can say I never have baked any of my Walleye catches in 66 years, always deep fried. Well today I tried something different. I combined two recipes into one. I used to cover one side of the walleye with cream cheese and roll it up then stick it with tooth picks to stop it from unrolling, then deep fried. Today I just used a egg wash with a package of Kraft Shake n bake with some added spices. Coated one fillet and layed onto the covered rack and then added a second over top. So we now have two walleye fillets with cream cheese in the middle with no tooth picks to worry about on a baking sheet. Put them into my air fryer to back at 450* F for 20 minutes. Came out very tender and juicy. Very tasty for sure.
