I actually prefer tail meat in an etouffee or a stew but everyone that comes here from out of town wants them boiled.
It takes 9# on avg. of live crawfish to yield 1# of tail meat. Better value is to buy tail meat......
That's the way I look at it, and the only way I ever bought them was "Tails only".
Funny they never made it to the Commodity Market, with Pork Bellies & Soy Beans!!LOL
