I can buy pork rinds locally but where to buy Cracklins? Cracklins have some meat along with the fat?? Got this craving for some. Thanks if anyone can help.
Local Mex/Spanish markets sometimes carry baked out belly strips round here. They score them, season lightly and bake them. Very close to the "cracklin'" things.
I cut off all the skin and fat from a 16# picnic, My neighbor and friend just loves the cracklin. Could I just do it in the smoker for a wile or would it be better to do it on the bbq?

I see no reason a bit of smoke would hurt them! But you won't get to the temps needed to "crackle" them on your smoker. Err...don't THINK ya could. You wanna "bake" them...and not over open flame, the dripping fat will cause an inferno fast! Soo..I'd use a pan if on the grill.
I wish you lived a little closer to me, I just finished cooking 60 pounds of cracklins. Maybe I can ship some to you, I think they will keep for about a week. The stores I sell them to sell them out very quickly but I think a weeks travel would be ok. Send me your address and I will ship you a couple of bags and see what happens.
