Brined overnight with leftover pops brine. Got some loins soaking. Removing skin. Looks smoky Deconstructed Plated with mashed taters. Corn and a homebrew to wash it down

Yep, That looks great... I like the netting to hang and some chicken... point
 
It's hard to beat pops brine on yardbirds!

You'll learn soon, once you start hanging the birds to smoke, it'll be hard to go back to any other way for smoking low and slow. Spatchcock for high temp is great, but let me cure a bird and hang it and I'm in heaven.
