Couple last minute yard birds

Was wanting to do a big smoke for my birthday this weekend(brisket ribs PP etc) but weather kind of derailed that plan with rain and snow. Decided this morning I would run to the store and grab a couple chickens. It was 20 here today so didn’t want to spend too much time outside.

Rubbed down. One with jerk seasoning. The other with Stubbs chicken rub.

Fired up the SV24 for this one. Rolled 325 and used apple. Had a few cold ones of course

Rolling along nicely...around 125 at this point

Hit 160 and pulled them out since I knew they would they would carryover to 165

Pulled the breast meat and left the dark meat on the bones.

Added some stuffed mushroom caps and ABT’s wrapped in homemade bacon.

Forgot to get a plated shot but this chicken was juicy and amazing. Some used bbq sauce for sandwiches but I used a little hot jerk sauce on mine. Great quick smoke will definitely do again.

Any suggestions for the leftover pulled chicken? Was thinking maybe chicken salad or chickens tacos?
 
This time of year & with the frigid weather I’d take the carcass to make soup stock for some smoked chicken noodle soup. Just my thought

Leftovers-chicken enchiladas!!!

The Stubbs was actually very good. Kind of a sweet mustard peppery. One of our local grocery stores had it on clearance for 69 cents a bottle I couldn’t pass it up. I’ll def use it again. Enchiladas sound great thinks for the input!

Makes a great sandwich that’s for sure. Couldn’t believe how juicy these things turned out. Probably have 4 pounds of meat left off the bone id say

Thanks! It was probably more like mid 20’s like you said but damn it was cold!
 
looks really really good, but what was that ugly orange thing that was wrapped around your beer? lol...............i would bet chicken salad would be amazing. point worthy for sure.

Lol. It keeps reminding me year round how much I’d like to at least win more than 6 games again one day
 
Great looking chicken never seen anything that won't work with chicken. Just plain smoked chicken is fine with me.

Back to the chicken: how about a chicken pasta, or a smoked chicken casserole?
