Many thanks Smoky. This was my first stab at CSRs but not my last for sure. 3, 2, 1 method seemed to have worked brilliantly fit them.

Right on SRO. Glad they turned out good for you.

I think my IT was 175 after 3 hours of smoking. From there i cooked them wrapped in foil for another 2 hours but I'm not sure what the finished IT was. They did have a texture like pulled pork which is what i was shooting for.
