Country Style Pork Shoulder

[woodcutter]

Boned, trimmed and cut up a pork butt today. Sliced  into strips and rubbed with Bilbo's rub.

I felt like some smoke today so the AMNPS is lit at both ends with apple pellets and the frying pan has hunks of black cherry going at the same time. I think some fried potatoes would good with these tonight.

Supper turned out great even thou there wasn't an onion in the house for the potatoes. The pork being all smoked up and all the fat broken down was excellent.
