I realize that this thread was started over a year ago. I have not tuned the recipe. These ribs are cut from a shoulder (butt) in this neck of the woods. Think butt when you are smoking these rather than ribs. They will take about 4-5 1/2 hours depending on the size. They are done at 170, if you can find a spot to stick a probe.
