I went hunting this morning with the new .22 and I bagged my first ever cottontail rabbit. I just got done skinning him and wrapping him and putting him in the freezer. He was about 2.5 lbs whole.

I have some pheasant and chukar partridges in the freezer from an October hunt. I think I’m going to thaw those and the rabbit next weekend and smoke them Sunday the afternoon.

I'll be watching! Just mentioned rabbit this morning to my wife.
Now I got to thinking hasenpfeffer...had to go looking for recipes lol! Now I have another thing to try!

I love rabbit but my 1 time smoking it didn't work well, no fat and dry and tough, if I was to try again it would be bacon wrapped and a short smoke then a braise with some veggies till fork tender, Deer season is almost over here and taking our beagle out to hopefully jump some rabbits, let us know how it turns out
 
Sorry for the delay. Last weekend was a bit too busy and so was yesterday.

But it’s going down right now!

Smoked pheasant and chukar partridge. Fried rabbit.

I used Meathheads Memphis Dust recipe on the pheasant and Chukars.

I used this recipe for the rabbit.

Waiting on the oil to get to temp to toss the rabbits in the fryer.

Then it’s dinner time. Pork ‘N Beans and romaine garden salad with French dressing for sides.
