I'm working on my first cottage bacon, and just removed it from the fridge after curing for 7 days. RInsed it off and it looks like the cure didn't quite take on one of the pieces.

I've never had this happen before. Plenty of cure and seasonings in the bag, flipped it and massaged it just like I do for pork belly. I only photographed one side, but the flip side looks the pink as well.

The pork smells fine so I'll go ahead and smoke it later on today/tonight. Is the piece on the right still good? I just find it weird that this happened on the outside. Thickest part is about 2".

Any thoughts are welcome!
 
The pink is where it was touching something . That's normal . I always go 14 days when I cure something . 7 days is to short in my opinion .
