Started brining chuck roast using Wayne's, @thirdeye - brine about 2 weeks ago. I did toast the spices as he recommended on his web site. I normally just go a week but they never really have that good pickling taste. I seen where Wayne goes two weeks. Boy did that make a difference. His brine is money! I put roast in pot with one can of Guinness in 325 oven. Man did this turn out good and very tender.

WOW, you got some great color on that ✔️. I'm not sure which photo I like best... My Grandmother would braise corned beef in a pot of veggies and potatoes like you did, sometimes adding a pork shank.

Thanks Justin. Click on brine for that recipe. Just cooked like a roast. From what I can recall let go 2.5 to 3 hours. Added potatoes and carrots. 30 minutes added cabbage. Than another 30 minutes.
