I have a corned beef flat in the smoker. Got it up to 160* and covered it with foil with some apple juice and the juice that came in the package. Kind of over paid but it was hard to find and my wife wanted some to make corned beef and cabbage wraps.


 
Looks nice and you sliced them the way I love it, Now I want a Ruben...

I used the  A-MAZE-N Products, Inc

 Pitmasters Choice-Hickory/Cherry/Maple pellets to smoke the corned beef.

These were very good. Amy wrapped the corned beef, cooked cabbage and swiss chesse in Lavash tortillas brushed with butter and baked.
