I’ve made similar with homemade sauerkraut and mixed it with the beef and let it ferment. Was real good. When I do this I make sure to plan it right as the kraut comes out of the crock so the bacteria are still active.

Funny, I was think exactly this when I saw it. Reuben brat, cheese too. I have fermented sausage with just about everything BUT live kraut. Yogurt, keffir, buttermilk, probiotic culture. Once I tried FRM52 the fooling was over. Far better results.

Agree, but it’s still fun to build with what you have and is still delicious.
