One thing we like to do with smoked meat leftovers is make casseroles. They are typically easy to do and then also become leftover leftovers.... I smoked a butt friday night. It was an over night cook and then pulled it just to demonstrate this casserole....kinda funny..usually ill do a butt for sandwiches and such and then find things to do with the leftovers. This time though i wanted to do this casserole. So i guess the leftovers this time will be the sandwiches lol. Any way here is the pork
........the bark got a little dark on this one but once it was pulled it was all good...this pic is after the rest in a foil pan covered with a towel for a couple bours. It was not wrapped during the cook. Total time on the smoker was about 11 hr
Clean bone for sure! All pulled and ready to make the casserole
This is the mix for the casserole
In a bowl combine the southwest corn(drained)tomatoes with green chilies (drained) and the ranch style beans, then add about 2 cups leftover pork. Also a couple eggs as a binder to hold it all together
Mix it all up and add it to the casserole dish
Then for the cornbread topping .Mix according to the directions on the box and add a can of green chillies (drained)
Dump on top of the pork mixture and spread out with a spatula and into the oven to bake, it takes a little longer than the directions on the corn bread box but just make sure its browned nicely on top and a fork inserted into the corn bread topping comes out clean.
Then its time to eat!
This stuff is really good by itself but i like to add a few toppings to finish it off.
I wanted to share this because its a great way to use up any leftover pulled pork and super easy to throw together on a week night. Also it heats back up really well so you can strech your leftovers even further. Also this recipe is equally good using pulled chicken. Thanks for looking!
