how many of you cook hot and fast and how do you do it. i would like to learn that process
 
I do hot & fast brisket & butts, just check my signature & there are step by steps for both. I have not done the extreme hot & fast yet, but plan on trying it on my next one!

I vary with cooking chicken hot & fast and Low & slow. Wings I like hot and fast....Wet brining the is a key to juicy poultry.

I did a prime rib roast for Christmas one time. Got the lang up to 500 degrees, put the roast on and allowed it to drop to 350 for the remainder of the cook.
Its all about learning to control your fire in your pit.
