Cook #1 on new Recteq

I did my burn out this morning and decided that I might as cook something.. Got a chuck roast to make a Mississippi mud roast. Also grabbed a slab of ribs and a few chuck short ribs. More pics later...

About an hour and a half in. I set the temp to 260 and it just stays there. Now I don't know if it is accurate . But I ordered the new RFX w/4 probes and and air probe , so I will know then......

3 hours in , time to pan the chucky with its friends.. Into the pan and back on till tender .( it was probing around 165 ). Ribs were at around 175.. Final shots later.

Ribs done.. Chucky has been moved to the oven to speed things up ( yes I could've cranked the recteq up too but Why burn up the pellets when its good and smokey already).
