Considering Smaller Meat Grinder

I have a Kitchener grinder. I dont grind as much as I used to, but its still going strong.

Dedicated stuffer 100%! Tried the grinder stuffer attachment once and was like F this!

Got my new grinder today. I had also purchased two new LEM salvinox knives. One to pair with each plate. Is the knife that was included with the grinder different? I just figured I'd save it for backup or pair it with the kidney bean plate....which I'll probably never use.
 
Grinders are great. Homemade ground beef is mind blowing! Plus so many option on what to grind
 
Pairing the knives and plates is not as important as you might think. It’s a fine practice but really not necessary if the knife and plates are all true and flat.

Congratulations on your purchase.
I don't have a LEM grinder.
I have a Weston and it came with 3 grind plates (don't recall the exact sizes) plus the worthless plastic stuffing plate.
I used the medium plate for most generic grinds.
I started using a mix of the medium and fine plate for sausage. Got comments from my taste testers they prefer a finer grind of the fat.
Hopefully Doug DougE DougE will chime in on the plate sizes.

I found keeping the the knife sharp is the most important.

First use of the new #8 LEM Big Bite and very happy. Both coarse and fine grind went very well.
