Yes this is a dry cured fermented sausage. Sujuk.
There are a few diff spellings of this sausage, sudzhuk, sucuk or soujouk



I'm going to do this using B-LC-007, hog casings, Mold 600. All beef chuck.

Going to use a plastic tote with a lid in the front closet.

I just searched for a beef fermented sausage and that is exactly what came up.

looks good.

I just ordered a beverage cooler to use as a fermenting/curing chamber.

These are the first time i have had lots of whiskers on the hog casing from syracuse casings.

Sujuk dry is been weighed and ready for mixing.

B-LC-007 added to 60ml of cold distilled water, set aside and add last.
(spoon just used to mix)

All stuffed up and ready for weighing.

Going old school, no fancy equip. Each weighed and tagged. 48 hour ferment.
Had to add some salt water to up the humidity to 85%. I was at 39%, it jumped to 74%. Temp is 75, was 73.

Dont know if i'm going to mold these yet.

Better grow some mold just in case.

In a closed chamber it is a "Decent" humidity, however in a closed chamber your still best with a coolmist humidifier.
 
This morning they are darker red, some air pockets under the casings, no biggie. When i flatten hope they will minimize some.

Looks awesome!It truly is one of my all time favorite things.

Looking to do some smoked Lahmejune very soon.The store bought ones are damn good but nothing beats homemade.
