Got a diabetic father-in-law, and we made this the last time we smoked some pork with him, and it came out great. Anyone who's trying to keep it healthy might want to give this a shot too.
1/3 cup Splenda granular
1 tsp salt
1/2 cup fat-free mayonnaise
1/2 cup low-fat buttermilk
1 1/2 tbsp white vinegar
2 1/2 tbsp lemon juice
1lb shredded cabbage and carrot bagged coleslaw
Whisk together all of the sauce ingredients, and then combine with the bagged coleslaw. I like to put the bagged coleslaw and sauce in a tupperware container, seal it up, and then just shake the crap out of it.
It comes out the best if you make this before you fire up the smoker, and let it sit in the fridge while the smoker's going - that would be the case for any coleslaw though.
This is very easy to make and only makes about 6 servings, so if you've got a few diabetics or health nuts coming over, they'll really think you're a stand-up guy for having them covered.
