Have made @chilerelleno ’s cilantro lime coleslaw, which is phenomenal. But looking for something that would be good with fried chicken and French fries.
ou might enjoy something like Del Taco’s sides! Their pinto beans with cheese or Mexican-style rice could complement fried chicken well. If you’re looking for something lighter, their fresh house-made guacamole or queso dip with chips might be great options too!

This is totally off the wall, but it's my new favorite thing:

- shredded cabbage
- pickled pineapple (cut in matchsticks)
- finely chopped Kimchi
- Kewpie mayo

I use this as a topper on a fried chicken sandwich (minus the shredded cabbage). Would easily turn into a coleslaw if you add some cabbage to tone things down.
That sounds really good!!

Awhile back got heavy into making Panini/Primantis sandwiches (with fries and slaw) and fell in love with keeping slaw super simple. This idea was based on a TV show interview I watched where they said it was only cabbage, onion, vinegar, SP. I tried a bunch of vinegars and found white wine the best. It's quite complex stuff and you would mistake it for lots of ingredients.

Fried chicken and fries in July? Cuke salad instead of slaw for me. Heck won't be long and I'll be doing fresh tomato slices with salt and white pepper.

This is my recipe. Nothing fancy but having messed with it the last couple of years I find there is no reason to make it more complex. You will likely want to scale it down. My recipe is for 5 - 6 lbs. of shredded cabbage as when I make it between selling some, sharing and eating it's gone very quickly. My peeps freak out over it. I do use the pre shredded cabbage mix that has some purple cabbage and carrots in it. You can also sub the Splenda out for sugar if you want. Just start with half and work it to your taste. The garlic sounds like a lot but trust me, it is not overpowering.

Chef Jeff’s Keto Creamy Coleslaw

Ingredients:

  • 30 oz. container of mayonnaise
  • 1 cup of apple cider vinegar
  • 1.5 t salt
  • 1.5 t garlic powder
  • 2.5 T prepared minced garlic
  • 2.5 T liquid from prepared minced garlic
  • 1.5 t smoked paprika (Optional)
  • 2.5 T medium ground black pepper
  • 1.5 to 1.75 cups Splenda
Combine all ingredients and whisk until smooth. This makes enough dressing for 5 – 6 lbs. of shredded coleslaw mix. May need to add 4 lbs. and after sitting a couple hours add the other 1 – 2 lbs. Coleslaw is best the next day.

Notes:

  • Smoked Paprika for slaw dressing is optional. Does add a little pink tint to the dressing.
  • If using fine ground black pepper reduce by half and adjust to taste
  • You can add celery seed if you like that in yours
  • Splenda can be adjusted to taste. Start with 1.25 cups and adjust .25 cups at a time until desired taste is achieved.
  • For a Sweet Alabama White Sauce for dipping chicken and wings reduce Splenda by 50%, double pepper and smoked paprika. This is a standard chicken sauce all through the south.
I have that exact recipe written down and labeled as “Alabama white sauce/coleslaw

I shared it some time ago on here and labeled it as exactly that. For the Alabama sauce I add some paprika. From that post "This is my recipe. Thank you Jeff.

Thank you Jeff.
COLE SLAW FYI:
My very first Kitchen job as a kid.
Add equal parts of White vinegar and Sugar to obtain a Neutral flavor in Cole Slaw.
Start with a lower amount : 1/4 cup is a good starting base point.
YUP! IT WORKS!
Adding more will deviate the flavor of Yur liking.
Spenda : ? NO CLUE , How it applies!?

1 head of cabbage, sliced very thin
1 onion, sliced very thin
1 C sugar

Mix together and let sit.

1 C white vinegar
1 C vegetable oil
2 tsp. sugar
1 tsp. salt
1 tsp. dry mustard
1 tsp. celery seed

Mix all ingredients together. Bring to a boil and until sugar
has completely dissolved. Pour over cabbage mixture and
stir together.

I don't go by a "proper" recipe, but by taste, so...
  • finely-shredded cabbage, mayo...taste/adjust until it has the amount of creaminess I prefer
  • white vinegar..taste/adjust for the "zing" I like
  • sugar...taste/adjust until it balances the vinegar
  • celery seeds, coarse black pepper, and salt...taste/adjust until I'm happy!
Sometimes I'll shred a carrot for a pop of color or, if I have it (I rarely do), a bit of red cabbage.
