Cold Smoked Reaper

Got 1lb of C, Reaper at the Amish store other day.

Going with cold smoked Hickory.

I made cheeseburgers the other day with this stuff a friend of mine brought from Michigan. On its own... pretty darn hot but not over the top, On a burger or three, it was right tasty.

I have not tasted the reaper cheese before I smoked it.

Room temp rot before I wrap some cloth around it.
Going to be a few months before I taste it.

That reaper cheese looks mouth watering good. Hope i cross some around here. Found some reaper jack last weekend. Bought 1 to try it and love it. Picking up more this weekend for smoking
