Hi, I'm planning on smoking two pork butts that total 22lbs. I have a charcoal grill with a smoker box on the side. I'm a little concerned about increased cooking times because it is 9 degrees outside and most of the time it is windy. I have to have these ready by 4 p.m. Tomorrow. Planning on 18 hours or so on the smoker. Should I wrap the grill? Blankets?
