Went offshore this past weekend. Boated a really nice cobia; about 44" long, 35#... I was looking forward to cobia steaks as soon as the fish hit the ice!

Started off the meal with a bresaola salad...

Decided on Mediterranean marinade for the cobia steaks for the grill.

Along with sauteed mushrooms and stewed zucchini and squash.

Outstanding meal. Man that cobia is fantastic when fresh!

Total symphony on the palate with a really good bottle of chardonnay white wine!! Five stars!!!! Wow was that GOOD!!!!
 
Fantastic looking plate Keith. With the shape of those Cobia steaks they'd be the perfect fish dish to serve on Valentines day.

Thanks Chris! Yeah, I noticed the shape too. Cut a 3" section of the loin for each steak, then butterfly right in the middle to fold it open for the steaks...
Cobia is yummy, and yours looks off the charts!

Nice fish been a long time since I've caught one or even fished for one
 
I caught 1 back in the 70's deep sea fishing out of port Canaveral, I don't recall mom cooking it so stepdads brother probably ended up with it. That looks really good. Growing up I was never exposed to much grilling and the only smoking was in the smoke house. I would bet less than 5 times I ate grilled hotdogs or burgers, I have since made up for it :emoji_laughing:
