Closet Biltong. Temp is perfect and the little fan works good.

Marinaded for 3 hours. Lots of biltong recipes online

4-13 day hang time


 
Nice. How do yo know when their ready to eat? Just personal preference on texture?

Stiff and just a tad of squeeze.

My biltong spice came from a friend in the UK, Everything already in it except the malt vinegar.

Love it! I use the spare bedroom closet as the "root cellar". It's also where I hang pancetta to age.
