Home made venison Italian sausage

Got my fresh Italian sausage all packaged today, left a couple packs out to cook for dinner. We did classic New Orleans style po-boys.

sautéed the Italian sausage and butterflied what we need for sammies tonight. Then I toasted the French bread for a few seconds. Want it slightly crunchy on the outside but nice and chewy on the inside.

Mayo on each side, links on one, shredded lettuce and pickles on the other. If your in New Orleans, that’s the way they come when you say “dressed”, and it’s perfect for Italian sausage po-boys.

glass of vino, cool ranch doritos. Our valentines dinner and we couldn’t be happier.
 
Fried oyster or a crawfish Poboy if we are arguing best lol
Now a GOOD fried oyster poboy is #1 for me if it’s a good one... fried properly and loaded with oysters. A bad one isn’t worth the bread it comes on.
 
Love a po boy!!

I like mincing/dicing the tomatoes, and pickles, and dressing the lettuce itself with a remoulade. Really helps it stay together.

Unless I have whole pickles/spears, in which case I like a whole spear on it

Looks great. What recipe did you use for the Italian sausage? I still haven’t found the right one

Thanks everyone. Today’s leftovers are an exercise in gluttony. Leftover Italian sausage link, boars head pastrami, chisesi ham, Swiss, lettuce, pickles and a mayo-mustard mix.
We may get iced in at work so I wanted to make sure I wouldn’t go hungry.
