CI Beef Skirt Steak With Chimichurri Sauce & Sides!!

Hey all, the wife and I were discussing dinner earlier this morning over coffee... We were wanting to try something different. Don't get me wrong, we eat well... but wanted to try something that we'd not had before. I've been doing some Umai projects lately, and noticed some recipes on their site. Well, over coffee my better half & I were looking at them & seen this recipe! We had some skirt steak in the freezer so decided this was a go!

Sorry for the lack of pics, but wanted to share this with y'all!

First, made up the Chimichurri sauce... Then in the fridge it went.

The recipe called for grilled skirt, but I didn't want to fire up the kettle for a 5 min cook... So the CI got the call! Melted a bit of bacon grease in the CI & put in the skirt that was seasoned with some SPOG! The cook didn't take long!

While I was cooking the skirt, my better half was making up a couple salads. One was a shaved cucumber with red wine vinegar & topped with dill. The other was a tomato & green
bell pepper with chips & tossed in a champagne vinaigrette dressing!

Again, sorry for the lack of pics... But here's what we ended up with!

This was a tasty meal, we agreed that this will be put into the dinner rotation!

I LOVE chimichurri. It’s also great to use on grilled vegetables and chicken too.

I remember when skirt steak was not mentioned and we bought it cheap. I wish it was still!

I hear ya, kinda like brisket... Brisky used to be real cheap, now it must contain gold or somethin!
